Colombian street food tells our most genuine cooking history; on the street you experience like no other scenery, the warmth of those who roast arepas on a grill, cover their tamales with a lid to serve hot or fry an empanada with the hope of taking us to paradise in one bite. These recipes should never be judged by the elegance of the table or their sophisticated plating, but by their capacity of convincing the diner, by good seasoning and passion, of the delight they have on their hands. The diner in reward comes back and tells others about it in a gratitude chain that multiplies by word of mouth.
The streets are a hotbed of culinary stars that fill their posts with dreams and embark in the job of inspiring love though family recipes and talent. From one of those blessed sidewalks stands Luz Dary Cogollo, who brought from her native Caribbean her most celebrated ingredients like suero or yams, her most local recipes like plantain mazamorra or mote de queso, and her curiosity, the same one that encouraged her to explore Andean tubers, ancestral herbs and the diversity of foods she found in the different markets of the city she now calls home, Bogotá. The result? A melting pot of authentic flavors and joy that she shares daily at her restaurant at the Perseverancia Market.
What you’ll live
Join Luz Dary – better known as Mamá Luz by her clientelle- and prepare with her guidance her favorite street food bite, celebrating her appearance in the new season of Street Food Latin America, available on Netflix now.
Mamá Luz will welcome you into our street food kitchen with a recipe that pays tribute to a full legion of empirical cooks trained by oral tradition, that daily set a cart or stall and open an umbrella to share that miscegenation that is Colombia kneaded with hope and smiles.
Our classes are one-on-one cooking workshops, so you can always have your microphone on and ask as many questions and comments. We limit the class capacity to small groups to guarantee an intimate experience and encourage the conversation among all participants. It’s a social event!
