We will not be the parents of such a perfect creation but we are willing to get into the tunnel of time to pay homage to that peasant who one day going out to fulfill his wages, he thought about transforming a dough into the container to transport his lunch, sometimes with vegetables, other times with proteins that he later wrapped and took to the oven to complete his cooking. The Empanadas have accompanied man through the history of humanity, they have restored it to build entire cities, leaving in time a legacy as infinite as its different crusts.The fillings depend on the flavor of each piece of land where it is well prepared, as does its cooking technique. It is so versatile that it can be a starter, a main course and even a dessert; their different names carry with them ancient traces, historical and ethnic: in China they are called Jiaozi, in India Samosa, in Russia Kulebiak and in Latin America empanada.

In Colombia, going from the sea to the jungle, you will find a typical empanada from each region and popular belief. For example, before lunch on Good Friday, a piangua one could well serve as an aperitif for a vigil feast in the Colombian Pacific Coast. If you are in Antioquia, don't be surprised if the host is not the most anticipated food after mass, outside the parishes there are plenty of small stalls offering tiny and crispy empanadas, filled only with a potato and hogao (onion and tomato stew), known locally as "Church empanadas".
